I really like the idea of varied mobs, and it isn't as tough as adding all new mobs. I don't really like how modern minecraft keeps adding all those useless mobs for variations, when the devs could be expanding on pre-existing mobs. Why not stuff like Cobblestone/Stone creepers that spawn deep underground, have more health but a smaller blast radius? Sand creepers? I really like the idea of neutral cave mobs to add some spice underground. I enjoy the idea of villagers but I feel like they were poorly implemented in minecraft. Maybe use Pigmen who live in little underground communities? They would be connected with obsidian somehow, and some lore could connect them to their zombie brethren. Maybe underground cows or pigs? The raw meat would damage you but if cooked provides about the same health as regular raw pig/cow food. This could allow for some extra survival below ground, but punishes you a bit. Willing to help in any way possible. Just throwing ideas on the table (I'm sure you don't have a shortage of them anyways )

Yeah definitely don't have a shortage of them. Man different mobs sound really cool actually, at first I was like ahh that's silly but then I thought about like a rare red creeper that would explode with fire and stuff like that, it would definitely spice things up. I'll add it to the trello!
